Ingredients:

  • 1 kg chicken, cut into pieces
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2-3 green chilies, slit lengthwise
  • 3-4 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust according to taste)
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil or ghee (clarified butter)
  • Fresh coriander leaves for garnish
  • Water as needed

Instructions:

  1. Heat oil or ghee in a large pan or kadhai over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add minced garlic and grated ginger. Sauté for another 1-2 minutes until the raw smell disappears.
  4. Add chopped tomatoes and green chilies. Cook until tomatoes are soft and mushy.
  5. Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for 2-3 minutes until the spices are fragrant.
  6. Add chicken pieces to the pan and mix well with the spice mixture. Cook for 5-7 minutes until the chicken is slightly browned.
  7. Add water as needed to cover the chicken pieces. Bring the curry to a boil, then reduce the heat to low. Cover the pan and let it simmer for 20-25 minutes, stirring occasionally, until the chicken is cooked through and tender.
  8. Once the chicken is cooked, sprinkle garam masala over the curry and mix well. Adjust salt and spices according to taste.
  9. Garnish with fresh coriander leaves and serve hot with rice, naan, or roti.
