- 1 kg chicken, cut into pieces
- 2 onions, finely chopped

- 1-inch piece of ginger, grated
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust according to taste)
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil or ghee (clarified butter)
- Fresh coriander leaves for garnish
- Water as needed
Instructions:
- Heat oil or ghee in a large pan or kadhai over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add minced garlic and grated ginger. Sauté for another 1-2 minutes until the raw smell disappears.
- Add chopped tomatoes and green chilies. Cook until tomatoes are soft and mushy.
- Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for 2-3 minutes until the spices are fragrant.
- Add chicken pieces to the pan and mix well with the spice mixture. Cook for 5-7 minutes until the chicken is slightly browned.
- Add water as needed to cover the chicken pieces. Bring the curry to a boil, then reduce the heat to low. Cover the pan and let it simmer for 20-25 minutes, stirring occasionally, until the chicken is cooked through and tender.
- Once the chicken is cooked, sprinkle garam masala over the curry and mix well. Adjust salt and spices according to taste.
- Garnish with fresh coriander leaves and serve hot with rice, naan, or roti.
